Black Bean Turkey Burger with Baked Sweet Potato Fries

What do you do when you’re in the mood for a burger and fries, but you don’t want all of those unhealthy calories and hydrogenated oils? You kick all of that to the curb, and opt for all healthy stuff! I like to meal prep for the week, so this recipe in particular makes about 12 burgers. Eat what you eat, and freeze the rest!

You’ll need:

  • 2 pounds turkey sausage
  • 1 cup brown rice
  • 1 14.5 ounce can black beans, drained and rinsed
  • 10 Cremini mushrooms, diced
  • 4 cloves garlic, minced
  • 2 eggs
  • 1 teaspoon salt
  • 2 teaspoons pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon chili powder
  • 2 sweet potatoes, peeled and cut into “fries” about 4″ long
  • 4 tablespoons extra virgin olive oil, divided
  • Optional: avocado for garnish
  1. Cook the brown rice according to package directions, and set aside.
  2. Preheat your oven to 375 F. In a large bowl, combine the raw turkey sausage, cooked brown rice, black beans, mushrooms, garlic, eggs and seasoning. Work the ingredients thoroughly with your hands, making sure everything is evenly distributed. Start forming your burger patties. Mine are about 3.5″ in diameter by about .5″ deep.
  3. Heat two tablespoons extra virgin olive oil in a large pan. Sear each burger for about one minute on each side. As they’re done, lay them out on a greased baking sheet.
  4. In a separate bowl, toss the sweet potatoes in the remaining olive oil, and add a bit of salt and pepper as you wish. Spread them out on a separate baking sheet.
  5. Put the burgers and sweet potatoes in the oven, and bake for about 15 minutes.
  6. Remove the burgers from the oven. Leave the sweet potatoes in, and turn on the broiler. Bake for an additional two minutes.
  7. Garnish the burgers with avocado slices if desired. Serve and enjoy.
